In the expanded print dialog window there's a popup mid right that lets you change print options by group. Layout, Color Matching, paper type, etc.
I actually don't get that pop-up. However, if I use a function like Mail This Page, the email will contain the page in it's entirety. That would appear to isolate the problem to Preview....which is sort of like a Catch-22 because Preview doesn't seem to have printing options.
