I used DVD2one to archive films, two to a disc. It would compress the video, if necessary. Frankly, since I started using Plex and streaming, I am less reliant on DVDs. I use Handbrake all the time.
Also, thank you artie505 and joemikeb for the tip on using the legacy clone tool in Carbon Copy Cloner. I've managed to make a clone of Monterey to a USB drive that Startup Disk can see, though I haven't actually tried it out yet.
