Don't use apps that must have a screen display when they are active. For example when Music is playing, if you click the Home button it will blank the screen, but Music will continue to play. In that condition, when a phone call comes in, it will pause Music, take over the full screen with the slide to answer a the bottom of the screen. When you terminate the call, Music resumes. I have no idea how many apps that applies to, but I just tested to verify that it works in Music.
