Marcel Bresink's freeware app Tinkertool has been the standby for adjusting font and other settings since Mac OS X 10.0 and the current version is fully compatible with MacOS 11. I also found tweaking some of the Accessibility and Display settings in System Preferences can make a huge improvement.
Thanks for that, Joe. I used Accessibility to increase contrast and it makes a welcome difference. I hope that this setting does not affect my display calibration with i1Profiler.
