Removing the app in iOS 10 does not necessarily remove the functionality from the system, often it is just the UI front end. As you said, for an app like Clock, the functionality is used over and over again throughout iOS itself, other iOS apps, and third party apps.
If we knew what it was we were doing, it wouldn't be called research, would it?
