why can't you back up directly using iTunes and a computer?
Because iTunes crashes when I do:

As soon as it hits Step 2, boom! iTunes leaves the building.
I finally wiped the phone and did a factory reset, then restored from an older iTunes backup. That seems to have cured the problem, at least for now.
