Oh, one more thing. If it shows up in all the email clients, what's the point of having one as the default? Thanks.

The default client is the one that will launch if you click on an email address or email link pretty much anywhere in OS X. It is just like having a default application for a file.
If we knew what it was we were doing, it wouldn't be called research, would it?
