Upon further googling:

defaults write com.apple.iCal "n days of week" 2

and

defaults write com.apple.iCal CalUIDebugDefaultDaysInWeekView 2

both work to make a persistent 2-day Week view. (Experimentation with other numbers produced some pretty buggy results.)
