Next chance you get —while viewing the log in Console.app —command-click on that "AppleFileServiceAccess.log" name in the window's titlebar. A popup menu will appear showing the full path... which will (probably) be either /private/var/log/something or /Library/Logs/something.

Interestingly enough, i don't find any files with the string "AppleFileServiceAccess" in their name on any of my client machines (some of which are acting as file servers).

Well, if you had some sort of sharing turned on then that's pretty much par for the course. I don't suppose you recall which service(s) you needed to disable [?].
