This was buried in a different thread, so I decided to move it. Here's how to number pages in Pages 3.0.3, i.e. Pages '08 in iWork '08. If you want to number by having "2" appear on page two, and "1" invisible on page one:

Under "View" drop-down menu, select "Show Layout"

In inspector>Document (far left icon)>Document>check Header or Footer

Under "Insert" drop-down menu, select "Page Number" on desired page (2)

Format text -- font, font size, location

Click somewhere in body text

In Inspector>Layout (second icon from left)>Section>Check "first page is different"

Another way of doing that is...
  1. Click on Document in the tool bar
  2. Click on the Section tab
  3. Check (✔) the box labeled Hide on first page of Section
  4. Under Page Numbering select the page numbering style desired

That doesn't work in Pages 08. There's no "Hide on first page of Section" option.

It would be:
Layout>Section>First Page is Different
