What really annoys me is when I've been tab browsing for awhile, say somewhere you can really get lost like youtube, and have a few dozen tabs open, and all of a sudden.... pinwheel.... pinwheel.... pinwheel.... BAM. safari quits.

I've been getting that fairly often recently when I have a lot of tabs open. Really annoying. I wish it did the same thing FF did and restored tabs after a crash.

Likely Flash crashing you. You could try the HTML5 version of Youtube.

As to restoring tabs, just go to History-->Reopen All Windows from Last Session

Glims, a Safari add-on, allows you to permanently set the "open previous windows" after a crash/force quit.

Honestly, I'm more on Firefox now. Posted to their forums and they say it's not possible yet.
