Which itself begs a question: why have ten windows open in Safari? Some haven't gotten used to or haven't tried tabbed browsing. What really annoys me is when I've been tab browsing for awhile, say somewhere you can really get lost like youtube, and have a few dozen tabs open, and all of a sudden.... pinwheel.... pinwheel.... pinwheel.... BAM. safari quits. I've been getting that fairly often recently when I have a lot of tabs open. Really annoying. I wish it did the same thing FF did and restored tabs after a crash.

Likely Flash crashing you. You could try the HTML5 version of Youtube. As to restoring tabs, just go to History-->Reopen All Windows from Last Session

Glims, a Safari add-on, allows you to permanently set the "open previous windows" after a crash/force quit.

Honestly, I'm more on Firefox now. Posted to their forums and they say it's not possible yet.
