It appears the portability factor has drawn all the bird guide developers to iOS and/or iPadOS. While there are excellent bird identification apps for the IPad that will run on an M1 Mac such as Merlin Bird ID by Cornell Lab, Sibly Birds 2nd Edition, and Sibly Guide to Hummingbirds and there are even more for iOS that aren't compatible with even iPads much less M1 Macs.

Personally my favorite is Audobon Bird Guide for iOS (but will run on iPadOS but not macOS on M1 Mac) and the Merlin Bird ID is a very close second. (My preference for Audobon may be colored by the fact it was the first I found many years ago when I first began to watch the birds in my back yard — the one I was curious about turned out to be an immature bald eagle.)

I did find that the bird apps were geared toward iOS and iPadOS with he exception of one which required OS10.15

Pity.
