Many people are upset because 10.6 no longer uses creator codes. Instead, the default application is determined by the file extension, regardless of the application that created the file. This MacWorld review of LaunchCodes may be an answer. The price is certainly reasonable.

Here's an app that might actually solve the problem. I haven't tried it and there are no reviews so far but it's worth posting. Magic Launch purports to bring back creator codes.

Looks okay... and it will probably enjoy a small following.
Even though i'm still in 10.5, i seldom (if ever) *rely* on double-clicking anymore. Between the Finder Toolbar (currently sporting GraphicConverter and File Buddy [as well as Time Machine and other assorted goodies]), and the Dock (many fixed apps) and DragThing (apps too numerous to mention), double-clicking has become almost obsolete -- especially if any uncertainty as to what will launch exists.
Beyond all that, the "recent items" list found in every app makes trips to Finder [for purposes of opening files] a rare occurrence these days. [but i do use some space on an old OS9 machine to store sundry items... so i employ File Buddy to make sure they have the desired creator codes (mostly so the icons look pretty).]
